In Romagna one of the more important roles than the domestic hearth it is that ofAzdora or Arzdora. It is often found a little dirty with flour, col rolling pin on cutting board ready to roll out the dough. But the Arzdora is something more, he is the true backbone of the family and, not surprisingly, leafing through the dictionary of dialect from Romagna we discover that in Italian Azdora means: Ruler, housewife, the one who presides over the governance of the house. Once the arzdora, or the ruler of household matters, was usually the wife of the head of the family and had to "take care of the house, prepare food, take care of all the necessary domestic work".

Even today when we talk about Arzdora we talk about genuine, handmade cuisine.
For the people of Romagna the Azdora was, is and always will be more than a myth a beloved institution.
